Cold cereal is on the top of the list of most common breakfast foods. For those who eat breakfast only about 2 in 10 people usually eat eggs. 1 in 10 usually have a toast, bagel, muffin or pastry. Breakfast so important because you are breaking your fast. It doesn’t matter if you eat breakfast at 6am or noon, but what you put into your body to fuel it after a fast is huge. Avoid a meal that is high in carbohydrates. Stick to a low carb, high fat breakfast to avoid that surge in blood sugar and insulin which can cause lethargy and hunger. An average bowl of cereal with milk has 82.5g of carbs and only 4.7g of fat. Yikes!

BUILD YOUR OWN BURRITOS
These breakfast burritos are so versatile and amazing to have on hand on those hectic mornings or a lot of times I will pull them out for a brunch. If you can tolerate dairy feel free to add some freshly grated cheese of your choice. Remember to get creative…I’m thinking pepper jack cheese, jalapenos and a spoonful of salsa for an amazing Tex Mex breakfast burrito!
As a mom of 5 you can about imagine all the different tastes buds floating around! This is why I LOVE meals like these where I can very easily customize the recipe to their liking. I have a very hungry teen boy who needs a few extra carbs. I will add hashbrowns, bacon, sausage and cheese for him. My oldest daughter tries to limit her carbs and she despises sausage but loves sauteed onions and green peppers. I’ll spare you with the rest of my kids’ pickiness. 😉 Below is a list of some of our favorite combos

NO TORTILLAS, NO PROBLEM
There are times in my life, to all my kids’ demise, that I have run out of frozen breakfast burritos and my homemade tortillas. This is catastrophic in their eyes because breakfast burritos are their absolute favorite breakfast.
When this happens I just politely tell them that we are having “naked” breakfast burritos. This is where I make all their favorite breakfast burrito toppings, but instead of putting it in a tortilla shell I just pile it on their plate. This is probably their second favorite breakfast.
HOMEMADE ALMOND FLOUR TORTILLAS FOR THE WIN!
These grain-free paleo tortillas are a family favorite made with almond and tapioca flour. They are used for breakfast, Taco Tuesdays, snacks and even dessert. They are a little higher in carbs to be considered completely keto, but low enough that if you eat just one, and watch your carbs the rest of the day you’d still be considered low carb. If making your own tortillas sounds overwhelming, we get it, time doesn’t always allow for this baking venture therefore we recommend Siete Brand grain-free tortillas options. Store them in the freezer to last longer. Pull them out as you need them and warm for 10-15 seconds on each side on a warm cast iron skillet.
LET’S CHAT FREEZING
After you fold up the tortilla and then wrap up the tortilla with the tin foil you can freeze them at this point or you may bake at 350°F for 15 minutes or until hot.
If you froze the burritos you will want to thaw in the refrigerator the night before. Then in the morning you can bake them at 350 degrees°F for 30 minutes or until the center is hot.

- In a small bowl whisk together the eggs and coconut cream, set aside.
- In a medium skillet, sauté the onions and peppers until tender crisp or until cooked to your liking. Add in the whisked egg mixture and cook, by folding the eggs, until eggs are soft but not over done.
- Lay out 3 8x8 squares of tin foil. Place a tortilla on each square. Divide the egg mixture between the three tortillas. Top with the onions, peppers, slice of bacon or toppings of your choice. Roll up tortilla then wrap in the tin foil. Bake 350 for 10 minutes.
- These may be made ahead and frozen. If frozen, take the burrito out the night before and place in the fridge. Bake 350 for 20-25 minutes or until the filling is hot. Enjoy!
