I love dressings. I love sauces. But more than that I like variety! I know that leafy greens and all sorts of vegetables are extremely healthy for us but does anyone get bored of the same salad and dressing? Me! That’s why I love this recipe. It is something different. It is something delicious. It is something packed full of healthy fats to help my sietity when eating a salad.

This dressing pairs well with our B.L.A.T Salad as it is a mayo based dressing that is very refreshing and takes the salad up a notch to absolute deliciousness.

I especially love salads in the summer when fresh lettuce, tomatoes and cilantro are easily accessible and at their prime time of deliciousness. This dressing is a great combo to our B.L.A.T Salad or if you are looking for a dip for these fresh vegetables this dressing works for that too!

If you eat more of a paleo diet, all you need to do is swap out the Swerve Confectioners for honey or your paleo sweetener of choice.

Creamy Avocado Cilantro Dressing

Ingredients

  • ¼ avocado oil
  • ¼ cup avocado oil mayo
  • ½ cup avocado (I love to use frozen avocados from Costco)
  • 2 Tbsp fresh cilantro
  • 1 Tbsp white vinegar
  • 1 Tbsp Swerve Confectioners (can use honey if paleo)
  • 1 Tbsp lime juice
  • 1 garlic clove
  • ½ tsp Real Salt
  • ⅛ tsp black pepper

Instructions

  1. In a high powered blender, or a hand held blender add your oil, avocado mayo, avocado, cilantro, Swerve Confectioners, lime juice, white vinegar, garlic clove, salt and pepper. Blend on high until smooth and creamy.
  2. Spoon over your salad and enjoy!
