HEALTH BENEFITS
This Russian Cream is similar to yogurt obviously without the beneficial bacteria. While yogurts can be very healthy for you there are a lot on the market that are not! Here is an example of one of the leading brands of vanilla yogurt. Nutrition per 8 oz serving: 200 calories, 8 g fat, 17 g carbs,4 g fiber, 7 g sugar, 21 g protein. This yogurt scares me for two reasons. One being the amount of carbs and the second reason is the unnecessary addition of a potentially carcinogen-containing ingredient: caramel color.
FEEDING FRIENDSHIPS
This recipe reminds me of a summer not too long ago when we spent a long weekend at a friend's Minnesota lake home surrounded by amazing friends, sandy beaches, and great food!
For breakfast my friend served something that I thought looked like yogurt but she told the kids it was called Russian Cream. The kids were a bit hesitant because it was something they hadn't heard of, but they politely took some. Since I don't do well with dairy I passed it by.
Before I knew it the kids were going back for seconds and yes, I think Preston hit 3rds or 4ths. 😬 They kept telling me how good it was. My interest spiked and I decided I would allow myself just one bite so that I could understand what all the rave reviews were about. Yep, the kids knew what they were talking about.
Thankfully my friend gave me the recipe and I was excited to hit the kitchen to create a dairy free and sugar free version. It took a couple tries....okay maybe four to master this baby but here it is! I hope you'll love it as much as us!
SO MANY OPTIONS
If you are paleo and this recipe is catching your eye, do not fear! I have options for you to swap one ingredient making it oh so yummy and paleo friendly. Depending on your tastes buds, you can swap out the Swerve Confectioners for honey, but my recommendation would be to use maple sugar as it has a milder taste than honey.
If your body is fine with eating dairy, than just swap out the coconut milk and use a grass-fed heavy whipping cream. You can use water in place of the coconut water without altering any flavor.
BRINGING THE FLAVOR UP A NOTCH
Life is busy, and thankfully we have so many options to simplify our lives in the kitchen. That is why I used vanilla extract in this recipe. If you want to take the flavor up a notch you can use a vanilla bean. The flavor is top notch but it does cost quite a bit more than vanilla extract.
Before you begin this recipe, the night before, place a can of coconut milk in the fridge to allow time for the cream and water to separate. To start, separate the coconut cream from the coconut water and set aside
Grab your vanilla bean and scrape the seeds from the insides; add seeds and bean to your coconut milk or heavy whipping cream. Bring to a very low boil for 1-3 minutes. Remove the vanilla bean and set the coconut milk aside.
Place ⅓ cup of the coconut water in a medium sized saucepan and lightly sprinkle the gelatin over top. Allow this to sit for 5 minutes so the gelatin can bloom. After 5 minutes, heat the gelatin water, gently whisking, until it comes to a slight boil. Add the Swerve Confectioners and real salt. Mix until sweetener is dissolved. Next, add the coconut cream and vanilla bean mixture. Whisk until well incorporated. Pour this mixture into 3 small ramekins. Let cool for 30 minutes and then cover and place in the fridge for 4 hours or longer. Serve with berries and my keto granola.

Keto Russian Cream
Ingredients
- 1 cup coconut cream off the top of the can - see directions
- ⅓ cup coconut water from the bottom of the can
- ½ Tbsp gelatin
- ¼ -⅓ cup Swerve Confectioners
- ½ tsp vanilla extract
- Pinch of Real Salt
Instructions
- The night before you plan on making this recipe, place a can of unsweetened coconut milk in the fridge to allow time for the cream and water to separate.
- Separate the coconut cream from the coconut water. Place 1/3 cup of the coconut water in a medium sized saucepan and lightly sprinkle the gelatin over top. Allow this to sit for 5 minutes so the gelatin can bloom.
