This recipe has so much phytonutrient density and diversity! Each color has a different phytochemical. The number one color missing in the US diet is…purple! Have you heard of the Nrf2? It is referred to as the activator of cellular defense, the master antioxidant switch and the guardian and gatekeeper for health and longevity! The phytonutrients in fruits and vegetables that are the color purple, activate the Nrf2! So shred that purple cabbage, put in a little eggplant and enjoy this recipe!
EAT THE RAINBOW
In my health coaching class we are going over the importance of "eating the rainbow" and no, that does not mean in the form of skittles! Eating a wide variety of foods helps your body get all the essential nutrients it needs. Look at all that color in this salad! I do believe we have a rainbow winner!
This salad is perfect for picnics or with your favorite grillables. It is very versatile and you can add in any of your favorite veggies and it can quickly turn from a slaw into a salad of sorts.
THE SCIENCE BEHIND HEALTHY FATS EATEN WITH VEGETABLES
Most vegetables are essentially fat-free and are a rich source of healthy carotenoids. But In order for these carotenoids to be absorbed by our digestive system, fat is needed. That is why this recipe is top notch…you have all the healthy vegetables topped off with a homemade dressing full of healthy fats from the avocado oil. I chose avocado oil for this recipe because it is very mild in flavor but you may definitely sub it out with olive oil which is equally healthy. Just remember to diversify your fats just like you diversify our fruits and vegetables.
SIMPLE & DELICIOUS
In a medium sized serving bowl, mix together 14 oz. of coleslaw mix (or grate your own cabbage, about 2 cups), ½ grated carrots, ⅓ cup of chopped green or red peppers (I love my chopper), celery and onion; set aside. In a small mixing bowl, whisk together the ⅓ cup Swerve Confectioners, 2 Tbsp white vinegar, ⅓ cup avocado oil, ½ tsp salt and ¼ tsp black pepper. Pour over the cabbage salad ingredients a half hour before serving to give it time to blend flavors but not too long that it gets soggy. You can make this dressing ahead of time. It will separate but just bring it back to room temp if you stored it in the fridge, give it a stir and enjoy on your favorite salad!
WANTING IT PALEO, NO PROBLEM
If I’ve learned anything over the past 5 years is that our bodies are not a “one size fits all”. We each have our own epigenetics, preferences and life experiences. That is why I try creating recipes for a wide range of needs and wants.
This recipe can easily be transformed into to paleo salad. You can swap out the Swerve Confectioners in the dressing with a local honey or paleo sweetener of choice. That’s it. One swap and you have a paleo salad calling your name!
Glorified Coleslaw Salad
Ingredients
- 1-14 oz of shredded cabbage or favorite shredded salad mix
- ½ cup carrot, grated
- ⅓ cup green pepper, diced
- ⅓ cup diced celery
- ⅓ cup diced onion
- ⅓ cup Swerve Confectioners
- 2 Tbsp white vinegar
- ⅓ cup avocado oil
- ¼ tsp black pepper
- ½ tsp Real Salt
Instructions
- In a medium sized serving bowl, mix together your cabbage mix, carrots, green peppers, celery and onion: set aside.
- In a small mixing bowl, whisk together the Swerve Confectioners, white vinegar, avocado oil, salt and pepper. Pour over the cabbage salad ingredients a half hour before serving to give it time to blend flavors but not too long that it gets soggy. Enjoy!
