THE AVOCADO BATTLE

Avocados are one of the superfoods we should all have in our diet. The amazing heart-healthy fats that are in these babies are just what the doctor ordered! Along with healthy fats, avocados are a great source of vitamins C, E, K, and B-6.

The reason I did not eat them as much as I should have is that I am pretty sure my chickens ate more of them than we did. I’d buy a big bag at Costco, set them on the counter to ripen, and then poof, one day they’d be ripe and the next day they’d all be soft and brown. 😩 But no more! I now buy my avocados in the freezer department at Costco. They are peeled and in chunks. I just set them out 30 minutes before I need them in a recipe or on my salad. They. Are. Life. Changing!

SUBSTITUTING INGREDIENTS

These past couple of years, I have learned that not all of our digestive systems are the same. Therefore we do not all tolerate the same foods. You need to do what is best for you and your body. That is why I love to create recipes with options!

I’ll give you a few suggestions for substitutes with a 1:1 replacement for this recipe:

coconut oil 👉 grass-fed butter
coconut milk 👉 half & half
Swerve Confectioners 👉 blended coconut sugar

THE SIMPLICITY AND DELICIOUSNESS OF THIS RECIPE

In a high-speed blender or a Nutribullet add in 1 cup mashed avocado, ¼ cup refined coconut oil or grass-fed butter, ¼ cup of coconut milk (carton) or half & half, ¼ cup Swerve confectioners or blended coconut sugar, 3 Tbsp lime juice, 30 drops vanilla stevia drops and 5 drops Young Living Essential Oil. Adding this lime essential oil is what takes this recipe to the top! Don’t skip this step! l then blend all these ingredients until smooth. Place in separate ramekins and top with my low-carb whipped topping recipe and lime zest. So refreshing!

Instructions
